Cut the Vertage mozzarella into your desired shape, then slice in to 1/4 inch pieces. Cut all the cherry tomatoes in half lengthwise.
Spoon the balsamic glaze on to the center of the plate. Take the back side of a spoon and spread the glaze towards the edge of the plate.
Add mozzarella on top of the glaze, then adding the cherry tomatoes.
Drizzle olive oil over the plate. Finish the salad with a garnish of chives, sesame seeds, and salt.
